Wines to drink and keep

While most wines are for immediate enjoyment, some mellow with the years. Winemaker Ian Hollick makes some stellar reds that get better after a few years of bottle ageing. EU HOOI KHAW writes.
IN 1974 winemaker Ian Hollick bought land in Coonawarra, in the cool south-east corner of South Australia and planted classic varieties of cabernet sauvignon and riesling.
"I borrowed money from the bank and from my mother," said Hollick, who presented his wines at a winemaker’s dinner at the Chalet, Hotel Equatorial, Kuala Lumpur recently.
Before his purchase, Hollick had had the experience of working for Mildara Wines Coonawarra, progressing to become the manager of Mildara vineyards nationally, including the Coonawarra winery. He has an agriculture science background behind him, having graduated from the Dookie Agricultural College, and spent a year in a vineyard in Bordeaux in 1977(...)
